Title & Level: Intermediate Apprenticeship (Level 2) Food and Beverage Service

Introduction
This Apprenticeship will help you to develop skills in a number of areas including; Safe and hygienic Working Practices, Food Service and Beverage Service Techniques and Customer Service Skills.  The course is aimed at students in a working environment and will help you learn, develop and practice the skills required to work effectively in a range of Hospitality environments.  Through the course, you will also develop creative thinking, numerical and communication skills, as well as an understanding of employer rights and responsibilities.

Entry requirements
You must have GCSE English and Maths at grade D and will need to pass an interview.  You also need to be employed in the Food and Beverage Service sector or about to start an appropriate role.

Duration
This is a 12 month course.

Career Prospects/Progression
Successful completion of this course could allow you to take a Level 3 qualification, such as the Advanced Apprenticeship in Hospitality Supervision and Leadership, which would prepare you for employment in a supervisory role.

How will I be assessed?

The mode of assessment depends upon which part of the programme you are completing.  Assessments are paper-based, online and in the work place.

Course Content/units
The qualification comprises of the following:

Level 2 Award in Hospitality and Catering Principles (Food and Drink Service)
NVQ Diploma (Level 2) Food and Beverage Service
Functional Skills (Level 1) in Maths and English
Employment Rights and Responsibilities
Personal Learning and Thinking Skills

For your technical qualification, you will complete eight units:

•    Safe, hygienic and secure working environments in Hospitality
•    Food safety in catering
•    Effective teamwork
•    Giving customers a positive impression
•    Preparation and clearing of service areas
•    Service of food at table
•    Service of alcoholic and non-alcoholic drinks
•    Dealing with payments

For the practical element of your course, you can choose from a range of units.  The following are indicative of a typical Food and Beverage Service course and build on the knowledge gained through the above:

•    Employment rights & responsibilities in the hospitality, leisure, travel and tourism sector
•    Maintain a safe, hygienic and secure working environment
•    Maintain food safety when storing, holding and serving food
•    Work effectively as part of a hospitality team
•    Give customers a positive impression of self and your Organisation
•    Prepare and clear areas for table service
•    Serve food at the table
•    Prepare and clear the bar area
•    Serve alcoholic and soft drinks
•    Provide a counter and takeaway service
•    Maintain and deal with payments
