Apprenticeship (Level 2) Hospitality Services
Title & Level: Intermediate Apprenticeship (Level 2) Hospitality ServicesIntroduction
This course is designed for students working in the Hospitality Industry who have a variety of duties encompassing food production support, food and beverage service, house keeping and general customer service. You can take units across a range of services, focussing on either a cooking or non-cooking pathway. You will also develop useful skills in areas including creative thinking, communication and analysing numerical information. Overall, you will have the opportunity to learn, develop and practice the skills that allow you to make an effective contribution in your job role.
Entry requirements
You need at least GCSE English and Maths at grade D. You will also need to pass an interview and to work in the Hospitality Services Industry, or have the offer of appropriate employment.
Duration
This is a 12 month course.
Career Prospects/Progression
If you successful complete this qualification, you could progress to a Level 3 course, such as an Advanced Apprenticeship in Hospitality Supervision and Leadership, which would suit those looking to move into a supervisory role.
How will I be assessed?
The mode of assessment will depend upon which part of the course you are completing, but will include paper-based assessment, on-line assessment and workplace assessment. You will undertake formal tests of knowledge and understanding according to your learning agreement with the programme leader, based on the individual work role.
Course Content/units
The programme includes the following:
• Level 2 Award in Hospitality and Catering Principles (Hospitality Services)
• NVQ Diploma (Level 2) in Hospitality Services
• Functional Skill (level 1) in Maths and English
• Employer Rights and Responsibilities (Workbook)
• Personal learning and thinking skills
For the underpinning theory, you will complete a number of units based upon your chosen Hospitality Services pathway, such as kitchen administration, food production, food service, housekeeping and customer reception duties.
Theoretical Non-Cooking Units
Non-cooking units may include:
• Safe, hygienic and secure working environments in hospitality
• Effective teamwork
• Chemicals and equipment used for cleaning in the hospitality industry
• Cleaning and servicing of hospitality areas
• Maintain housekeeping supplies
• Provide a linen service
• Giving customers a positive impression
• Reception communication procedures in the hospitality industry
• Arrival of customers
• Departure of customers
• Service of food at table
• Service of alcoholic and non-alcoholic drinks
Practical Non-Cookery Units
• Maintain a safe, hygienic and secure working environment
• Maintain food safety when storing, holding and serving food
• Give customers a positive impression of self and your organisation
• Deal with customers across a language divide
• Deal with arrival of customers
• Deal with bookings
• Produce documents in a business environment
• Store and retrieve information
• Work effectively as part of a hospitality team
• Employment rights & responsibilities in the hospitality, leisure, travel and tourism sector
Theoretical Cookery Units
For the cooking pathway, the mix of units might include:
• Safe, hygienic and secure working environments in hospitality
• Effective teamwork
• Food safety in catering
• Kitchen administration in the hospitality industry
• Prepare, cook and finish food
Practical Cookery Units
• Maintain a safe, hygienic and secure working environment
• Give customers a positive impression of self and your organization
• Work effectively as part of a hospitality team
• Maintain food safety when storing, preparing and cooking food
• Complete kitchen documentation
• Set up and close kitchen
• Prepare hot and cold sandwiches
• Prepare and finish simple salad and fruit dishes
• Prepare and present food for cold presentation
• Prepare and cook meat and poultry
It should be noted that this apprenticeship is tailored to the particular work role, and so is dependent upon a learning agreement with the programme leader and the employer. Accordingly, units could be taken from each pathway to create a general hospitality services learning agreement.
